An apple a day keeps the doctor away – Was ist drin, im Lieblingsobst?

Gleich zwei mit Doktortitel erläutern was hinter dem Sprichwort steckt: Gehen bei der Saftherstellung Vitamine verloren? Warum reagieren manche auf Äpfel allergisch, auf Apfelsaft aber nicht? Warum sind manche Apfelinhaltsstoffe sogar Vorbild für pharmakologische Wirkstoffe? Und was hat all das damit zu tun, dass der Apfel nicht schon braun ist, wenn wir ihn aufschneiden?
Praxisteil: Im neuen und hochmodernen Getränketechnologischen Zentrum siehst du, wie aus Äpfeln Fruchtprodukte wie Saft, Smoothies und Püree entstehen.
